Here’s what you need for the chia seed pudding:
1 can (400ml) coconut milk + more milk of choice if needed
1/2 cup chia seeds
1 tsp vanilla
1-2 Tbsp maple syrup or sweetener of choice
*I used 1/2 maple syrup & 1/2 monk fruit sweetener
8 California strawberries (per serving)
Mix the milk, chia seeds, vanilla and sweetener in a medium bowl. Let sit in the fridge overnight (or for at least 2 hours). If the chia seed pudding is too thick, feel free to stir in additional milk to thin it out to your desired consistency. Top with sliced strawberries. Enjoy!
