Ingredients
- 1 avocado, whole
- 1 banana, ripe
- 1 tbsp cocoa powder
- 2 tbsp almond milk
- 1.5 tsp stevia powder or 1 Tbsp maple syrup**optional
- pinch salt
- 1 tsp vanilla
Instructions
- Blend or process until you see smooth, creamy consistency.
- For a darker chocolate mousse use 2 Tbsp cocoa powder instead of 1.
- The added stevia or maple syrup is optional. If the banana is not ripe enough, there may not be enough natural sugar to sweeten the mousse.
Holy Guacamole! What happens when you’ve already used up avocados for salads, toast and guacamole? I tend to buy avocados in bulk because I use them for so many different meals. The only problem is that there is a short window to use these ripe gems. Using the combination of avocado, bananas and cocoa powder does seem obscure, but shockingly it does seem to work! The beauty of this recipe is that you can adjust the ingredients to suit your own taste. Let’s face it, we KNOW that sugars and sweets are BAD for us, but most of us will still crave something sweet from time to time (or daily!!). This mousse is a perfect antidote for sweet cravings. Each serving of avocado chocolate mousse provides heart healthy monounsaturated fats, potassium-rich fruit and iron-rich cocoa powder. For some, this may not be sweet enough, so adding vanilla, stevia (zero calorie sweetener) or maple syrup will fit nicely to reach that bliss point!Top with your choice of fresh or frozen fruit, coconut or hemp hearts – enjoy!!
