Green Monster Blender Muffins

IMG_0190The most popular muffin recipe on my website are these green monster blender muffins!! They taste just as indulgent as a typical banana muffin, but it’s like drinking a veggie smoothie (in muffin format)!!! Filled with fibre, omega 3’s and antioxidants, these tasty muffins are perfect to have on hand.

These nutrient packed snack muffins are genius! They are a great vehicle to hide veggies and fruit, while looking like a treat.

Ingredients

Scale

2 cups large flake oats

1/4 cup chia seeds

1/4 cup hemp hearts

2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/2 tsp cinnamon

1/2 cup maple syrup

1/2 cup milk of choice

5 cups spinach

3 ripe bananas

1/4 cup butter*

2 eggs***

1 tsp vanilla

1/4 cup chocolate chips

Instructions

  1. Preheat your oven to 375 F and prepare 2 x 12 cup muffin pans
  2. Pulse the oats, seeds, baking powder, baking soda, salt and cinnamon in a high speed blender. Set aside in a bowl.
  3. Blend the spinach, eggs, bananas, milk, maple syrup, vanilla and butter together. Add in the dry ingredients and pulse until just combined.
  4. Pour into your muffin pans and decorate with chocolate chips
  5. Bake for 20-25 minutes, or until cooked throughout. If you press on the top of the muffin, it should bounce back.

Notes

*substitute for coconut oil or margarine to keep it plant-based

**substitute the eggs for a flax or chia egg (2 Tbsp ground flax + 6 Tbsp water)
