Filled with fibre, omega 3’s and antioxidants, these tasty muffins are perfect to have on hand.

Ingredients
2 cups large flake oats
1/4 cup chia seeds
1/4 cup hemp hearts
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/2 cup maple syrup
1/2 cup milk of choice
5 cups spinach
3 ripe bananas
1/4 cup butter*
2 eggs***
1 tsp vanilla
1/4 cup chocolate chips
Instructions
- Preheat your oven to 375 F and prepare 2 x 12 cup muffin pans
- Pulse the oats, seeds, baking powder, baking soda, salt and cinnamon in a high speed blender. Set aside in a bowl.
- Blend the spinach, eggs, bananas, milk, maple syrup, vanilla and butter together. Add in the dry ingredients and pulse until just combined.
- Pour into your muffin pans and decorate with chocolate chips
- Bake for 20-25 minutes, or until cooked throughout. If you press on the top of the muffin, it should bounce back.

*substitute for coconut oil or margarine to keep it plant-based
**substitute the eggs for a flax or chia egg (2 Tbsp ground flax + 6 Tbsp water)
