This hearty fall / winter salad features seasonal ingredients and provides the idyllic balance of sweet, crunchy and salty. California Prunes provide a pop of natural, low glycemic sweetness along with an array of other nutrients including vitamin K, potassium and fibre.

Ingredients
  • PRUNE TAHINI DRESSING
  • ½ cup tahini + 1-2 Tbsp
  • 1 lemon squeezed or 7-8 drops lemon essential oil + 2 Tbsp water
  • 1 Tbsp olive oil
  • 5 prunes
  • ½ tsp salt
  • 1 tsp garlic (minced or pureed)
  • ¼ - ⅓ cup water
  • SWEET & SAVOURY FALL POWER BOWL
  • 1 cup kale, finely chopped
  • ¼ cup pomegranate arils
  • 6-8 pecans
  • ½ cup edamame
  • ½ cup roasted butternut squash
  • 1 Tbsp hemp hearts
  • ½ cup brown rice *optional
Instructions
  1. Add all dressing ingredients to a high-power blender and puree. Add the water 2 Tbsp at a time. You may need to add more/less water to achieve your desired texture.
  2. Assemble all ingredients in a bowl and add 1-2 Tbsp of the prune tahini dressing.
