Strawberry Shrimp Salad

The perfect accompaniment to a summer BBQ or patio party. This summer salad is refreshing and light, yet satisfying. If you want a healthy high-protein meal in a pinch, this is a good go-to meal!

Serves: 4 servings
Ingredients
  • 400g frozen shrimp/prawns
  • 2 cups strawberries, sliced
  • 2 cups watermelon, diced
  • 2 bell peppers, diced
  • 1 medium box mixed spring salad greens
  • 2 avocados, sliced
  • CITRUS BASIL DRESSING
  • ¼ cup olive oil
  • ¼ cup balsamic or red wine vinegar
  • 1 tsp dijon mustard
  • 1 tsp maple syrup
  • ¼ cup citrus juice (orange, lemon or grapefruit) OR 6-8 drops citrus essential oils
  • 3 T basil, finely chopped
  • salt and pepper to taste
Instructions
  1. Fill a saucepan will water and bring to a boil
  2. Add the frozen shrimp to the boiling water and cook for 5-7 minutes, or until fully cooked.
  3. Drain the water from the shrimp and run cold water over to cool.
  4. Make the salad dressing by whisking all ingredients together in a bowl, or blending in a small food processor.
  5. Marinate the shrimp in the dressing for 5-7 minutes while you chop the rest of the vegetables and fruit. Use the remaining dressing for the salad.
  6. Serve in a large salad bowl or split into 4 equal servings.
  7. Enjoy!
Notes
Feel free to use any fruit or vegetables that you may have on hand. Other great additions could be sliced almonds, broccoli, cucumber, edamame, blueberries, feta cheese, hemp hearts or pumpkin seeds. Use your creativity, or whatever you have kicking around your fridge or pantry!
