Curried Chicken & Apple Salad

This recipe has been a staple in our kitchen for years. It's always a crowd-pleaser and keeps well in the fridge for 3-4 days.

Ingredients
  • 1 T avocado oil
  • 1 T curry powder
  • 1 tsp turmeric
  • 2 T lemon juice
  • 2 T or sweetener of choice
  • ¼ tsp salt
  • 1 cup plain Greek yogurt
  • 1 onion, diced
  • 4 chicken breasts, diced into cubes
  • 6 celery stalks, diced
  • 1 bell pepper, sliced and diced
  • 1 apple, cubed
  • 9 dried apricots, cut in small cubes
  • 1 cup walnuts, halves or pieces
  • salad greens or grilled greens of choice
Instructions
  1. Heat the oil in a non-stick pan or skillet. Add the onion, curry powder and turmeric. Salute 1-2 minutes or until onions are tender. Add lemon juice, sweetener and salt. Simmer over medium heat until sauce begins to thicken, about 1 minute. Remove from heat and stir the yogurt into the cooled sauce; set aside.
  2. If the chicken needs to be cooked, use the same pan used to cook the onions/curry sauce. Fresh chicken should take 5-8 minutes to cook throughout. If the chicken is already cooked, cut it up into small chunks.
  3. In a large bowl, toss the chicken, celery, bell pepper, apple and dried apricots. Add the veggie and chicken mixture to the sauce and toss until evenly coated.
  4. Serve the chicken mix on a bed of greens or with grilled vegetables on the side.
  5. Garnish with chopped apple, apricots, red peppers or walnuts
