These individual sized pizzas are sure to be a crowd pleasure. The toppings can vary based on what you have on hand.

Ingredients
  • TOMATO SAUCE
  • 2 tsp olive oil
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1 tsp basil, dried
  • 1 tsp oregano, dried
  • ½ tsp crushed red chili flakes
  • 1 5.5oz can tomato paste
  • 1 28oz can diced tomatoes
  • ¼ cup basil, freshly chopped *optional
  • salt and pepper to taste
  • hot sauce / sriracha to taste
  • PIZZA
  • 6 whole wheat pitas
  • 1 cup feta cheese
  • ½ cup basil, chopped
  • 2 bell peppers, sliced
  • 6 lean turkey pepperoni, sliced
  • 1 japanese eggplant and/or zucchini, sliced and roasted *optional
  • arugula, spinach or baby mixed greens *optional
Instructions
  1. Heat the oven to 375 F and line a baking sheet with parchment paper
  2. Make the tomato sauce: heat the oil and add the chopped onion, garlic and spices. Add in the tomato paste, diced tomatoes and let simmer until the sauce thickens slightly. Add salt, pepper and any other flavourings to taste.
  3. Spread the tomato sauce evenly amongst the 6 pitas
  4. Top with cheese, turkey pepperoni and various veggies
  5. Bake in the oven for 15-20 minutes, or until the edges are crispy and the cheese has melted
  6. OPTIONAL: If you would like to add the roasted eggplant (or zucchini), simply slice into coins and spread in one layer on a parchment paper lined baking tray. Spray with olive or coconut oil and sprinkle with a little salt, pepper and optional seasonings: smoked paprika, frank's, italian seasoning etc. Bake at 400F for 15 min or until desired crispiness has been achieved.
