This hearty fall / winter salad features seasonal ingredients and provides the idyllic balance of sweet, crunchy and salty. California Prunes provide a pop of natural, low glycemic sweetness along with an array of other nutrients including vitamin K, potassium and fibre.

Ingredients
PRUNE TAHINI DRESSING
½ cup tahini + 1-2 Tbsp
1 lemon squeezed or 7-8 drops lemon essential oil + 2 Tbsp water
1 Tbsp olive oil
5 prunes
½ tsp salt
1 tsp garlic (minced or pureed)
¼ - ⅓ cup water
SWEET & SAVOURY FALL POWER BOWL
1 cup kale, finely chopped
¼ cup pomegranate arils
6-8 pecans
½ cup edamame
½ cup roasted butternut squash
1 Tbsp hemp hearts
½ cup brown rice *optional
Instructions
Add all dressing ingredients to a high-power blender and puree. Add the water 2 Tbsp at a time. You may need to add more/less water to achieve your desired texture.
Assemble all ingredients in a bowl and add 1-2 Tbsp of the prune tahini dressing.
