Carrot Cake Energy Balls

A healthy, no-bake and nut-free alternative to carrot cake! Perfect for on-the-go snacks for school, work or kids day-care
Recipe type: Snack
Serves: 20 balls
  • 1 cup oats
  • 1 cup dates (about 12 medjool dates)
  • 1 heaping cup grated carrots
  • ½ cup coconut + more for rolling
  • ½ cup salted pumpkin seeds*
  • ½ cup sunflower seed butter*
  • ¼ cup hemp hearts
  • ½ cup raisins
  • 2 tsp cinnamon
  • 1 tsp vanilla
  • ¼ tsp salt
  1. Blend all ingredients in a food processor until a sticky dough forms.
  2. Roll in 1.5-2 Tbsp size balls.
  3. Optional - roll in additional coconut (or coconut mixed with hemp hearts)
*If you would like use nuts feel free to substitute the pumpkin seeds and sunflower seed butter for 1 cup cashews
