Carrot Cake Energy Balls

Serves: 20 balls
- 1 cup oats
- 1 cup dates (about 12 medjool dates)
- 1 heaping cup grated carrots
- ½ cup coconut + more for rolling
- ½ cup salted pumpkin seeds*
- ½ cup sunflower seed butter*
- ¼ cup hemp hearts
- ½ cup raisins
- 2 tsp cinnamon
- 1 tsp vanilla
- ¼ tsp salt
- Blend all ingredients in a food processor until a sticky dough forms.
- Roll in 1.5-2 Tbsp size balls.
- Optional - roll in additional coconut (or coconut mixed with hemp hearts)
*If you would like use nuts feel free to substitute the pumpkin seeds and sunflower seed butter for 1 cup cashews
